3000年前のハチミツが今でも食べられる理由

Keep it on your phone →1922年、考古学者たちがエジプト王ツタンカーメンの墓を開いたとき、宝石や彫像、そして粘土の壺を発見した。その壺の中にはハチミツが入っていた。封印されてから3000年もの月日が流れていた。しかし、中のハチミツはまだ新鮮だった。実際、そのまま食べることができたのだ。
これは珍しいことではない。ハチミツは世界で唯一、腐らない天然食品の一つなのだ。ジョージアなど、もっと古い遺跡からもハチミツの壺が発見されている。考古学者たちは約5500年前に貴族の女性と一緒に埋葬されたハチミツを見つけた。それでも食べられる状態で、甘いままだった。
その理由は化学にある。細菌が成長するには水分が必要だが、ハチミツにはほとんど水分がない。ミツバチは約80パーセントが水分の花の蜜を集め、巣の中で羽を動かして約17パーセントまで水分を減らす。その結果、何も生きられない濃厚で密度の高い液体ができあがる。
ハチミツはまた、pH4程度の弱酸性でもある。ほとんどの細菌は酸を嫌う。さらに、ミツバチは蜜に少量の酵素を加える。この酵素は過酸化水素という軽い消毒剤をゆっくりと作り出す。薬局で買えるのと同じ化学物質だ。
三つの保護機能が組み合わさっている。水分なし、低pH、そして微量の過酸化水素の持続的な存在だ。ハチミツが密封され乾燥している限り、棚でも洞窟でも墓でも、ほぼ永遠に保存できる。
もし瓶の中でハチミツが結晶化しても、捨ててはいけない。お湯の入ったボウルで優しく温めれば、結晶は溶ける。ハチミツは悪くなっていない。ハチミツはほとんど悪くならないのだ。
